If it happens when you are sleeping it is called sleep apnea. Apnea events can be of two types. One is obstructive apnea where the airway gets blocked by collapsing. The other type is called central apnea. That is when the airway is not blocked but you just stop trying to take a breath. Neither type is likely to cause you to choke. The body reacts to wake you up to start breathing again. The risk is long term due to a reduction in the amount of oxygen in your blood. Apnea events can be crudely detected by inexpensive oxygen sensors that you clip on your finger. But to be diagnosed you need a formal sleep test.
